Burrata e confit

4 x 125g Buffalo Burrata
200g yellow cherry tomatoes
200g red cherry tomatoes
25g basil
25g sugar
EVO Oil, as needed
Salt, as needed
Pepper, as needed
Fresh thyme, as needed
Fresh marjoram, as needed
Fresh oregano, as needed


Place the tomatoes cut in half on a baking sheet lined with parchment and season them with EVO Oil, salt, pepper and the herbs (finely chopped).
Dust with sugar.
Cook for 1 hour in the oven at 140°C, until the tomatoes are slightly parched.
Take them out of the oven, let them cool down and serve with Buffalo Burrata arranged on top of them.
An easy yet flavourful dish.
